Cheesy Mashed Potato Pancakes

Ingredients
3 C leftover mashed potatoes
1½ C shredded cheddar cheese
½ C flour
⅓ C chopped scallions, green & white parts
3 eggs, lightly beaten
⅓ C crumbled cooked bacon or chopped ham
1½ Tbsp garlic powder
1 tsp dried parsley (or 2 tsp chopped fresh parsley)
¼ tsp dried thyme
salt & pepper to taste
small amount of vegetable oil for frying
sour cream for serving
Instructions
- Put all ingredients except the frying oil and sour cream in a bowl. Stir until all ingredients are fully incorporated and the mixture is smooth. It will be fairly dry and not at all like pancake batter.
- Form mixture into 12 patties about 1.5 centimeters thick.
- Heat a large non-stick skillet over medium heat and add a small amount of vegetable oil.
- Fry the jpatties in batches for about 5 minutes per side or until golden brown and completely cooked through.
- Enjoy warm with a dollop of sour cream, some more silice green onions, and some extra cheese.
