Cheesy Mashed Potato Pancakes

Ingredients

3 C leftover mashed potatoes
1½ C shredded cheddar cheese
½ C flour
⅓ C chopped scallions, green & white parts
3 eggs, lightly beaten
⅓ C crumbled cooked bacon or chopped ham
1½ Tbsp garlic powder
1 tsp dried parsley (or 2 tsp chopped fresh parsley)
¼ tsp dried thyme
salt & pepper to taste
small amount of vegetable oil for frying
sour cream for serving

Instructions
  1. Put all ingredients except the frying oil and sour cream in a bowl. Stir until all ingredients are fully incorporated and the mixture is smooth. It will be fairly dry and not at all like pancake batter.
  2. Form mixture into 12 patties about 1.5 centimeters thick.
  3. Heat a large non-stick skillet over medium heat and add a small amount of vegetable oil.
  4. Fry the jpatties in batches for about 5 minutes per side or until golden brown and completely cooked through.
  5. Enjoy warm with a dollop of sour cream, some more silice green onions, and some extra cheese.
