Green Chili-Cheese Bake

(peppers, eggs, cheese, sausage, brunch, casseroles)

Yield: 8 servings

Ingredients

Nonstick cooking spray
8 eggs, slightly beaten
¼ C flour
¼ tsp baking powder
½ tsp salt
10 oz cottage cheese
¾ lb Monterey jack or cheddar, grated
2 - 4 oz can chopped green chilis
1 lb hot sausage, cooked and crumbled
¾ C onions, chopped and sautéed

Instructions

1. Prehead oven to 350°. Spray 9 X 13-inch pan with nonstick spray.
2. Cook sausage and crumble in bottom of prepared pan.
3. Mix remaining ingredients and pour over sausage.
4. Bake 1 hour.
5. Serve and Enjoy.
