How to Blanch Snow Peas
  1. Fill large pot with water and add a pinch of salt.
  2. Turn the burner to high, and let the water come to a rolling boil.
  3. Clean and trim snow peas. Discard any that are damaged or tough.
  4. Fill a large container with ice and cold water.
  5. Drop 1 lb of peas at a time into the boiling water and boil for about 2 minutes.
  6. Remove the peas with a slotted spoon and place them in the ice water to stop the cooking. Leave the peas in the water bath until they are completely cooled, 5 minutes or more.
  7. They are now ready for the next step in the recipe that uses them.
