Snow Peas and Mushrooms

Snow Peas and Mushrooms
Yield: 4 servings
Ingredients
1 lb snow peas, blanched
¾ lb mushroome, sliced
½ C chopped onions (optional)
2 cloves garlic, mashed
1 or 2 tsp ginger, grated
3 splashes of balsamic vinegar
Sesame oil for best flavor
Instructions
- Clean and trim snow peas. Discard any that are damaged or tough. Blanche.
- Clean and slice mushrooms in thin slices. Slice onions if using.
- On high, heat 2 Tbsp sesame oil in large skillet, add snow peas, mushrooms, onions, garlic and ginger, stirring constantly. Splash in the balsamic vinegar.
- Total cooking time will be about 5 minutes or less, depending on the heat of the burner. Add more oil as needed.
- Serve immediately.

- Fill large pot with water and add a pinch of salt.
- Turn the burner to high, and let the water come to a rolling boil.
- Clean and trim snow peas. Discard any that are damaged or tough.
- Fill a large container with ice and cold water.
- Drop 1 lb of peas at a time into the boiling water and boil for about 2 minutes.
- Remove the peas with a slotted spoon and place them in the ice water to stop the cooking. Leave the peas in the water bath until they are completely cooled, 5 minutes or more.
- They are now ready for the next step in the recipe that uses them.
