This is a good recipe for frozen corn. When served on the cob, this is called elote. Yield: 4 servings

Ingredients

Package of frozen corn
butter
salt
mayonaise
lime juice
chili powder
cotija cheese
cilantro

Substitutions:
Feta or Parmesan cheese for the cotija
Parsley for cilantro
Mexican crema, Greek yogurt or avocado mayonaise in place of the mayonaise

Instructions
  1. Heat a large skillet on high heat and add the corn. Cook for 8-10 minutes.
  2. Remove from heat and add butter and salt. Stir until mixed.
  3. Place the corn in a bowl and stir in mayonaqise and lime juice.
  4. Add a teaspoon of chili powder and mix well.
  5. Sprinkle the mixture with cotija cheese, chili powder and chopped cilantro.
  6. Serve immediately.
