Ingredients
Dipping Sauce
¼ C mayonaise
¼ C sour cream / Greek yogurt
¼ C freshly squeezed lime juice
3 tsp chili powder
1 tsp smoked paprika
¼ tsp Cayenne
½ tsp garlic powder
½ tsp cumin
Other ingredients
Lime Butter with Mint
4 ears of fresh corn on the cob
Cotija cheese - It adds a sharp, salty flavor and creamy texture.
Cilantro
Salt
Instructions
- Shuck corn. See detailed instructions on Web site for grilling.
- Make lime butter, or remove from refrigerator and melt.
- Mix dipping sauce ingredients together and set aside.
- When corn is done, drizzle with lime butter, then slather dipping sause on all sides
- Sprinkle with the cheese, cilantro and salt.
- Serve.
