Ginger-Lime Baby Carrots

Ingredients
½ lb baby Carrots
1 Tbsp EVOO
1 Tbsp minced fresh ginger
1 Tbsp minced garlic
½ chicken broth
1 Tbsp unsalted butter
2 tsp fresh lime juice (or substitute splash of rice vinegar)
¼ tsp Sriracha (optional)
Salt
Instructions
- Cook carrots in chicken broth until crisp-tender, about 3 min.
- Add EVOO and butter, garlic, ginger, lime juice, salt and Sriracha and boil over moderate heat until liquid is reduced to a thickened sauce.
- Serve.
