Carrots with Ginger & Garlic

Ingredients
2 lb carrots, sliced or baby carrots
3 cloves garlic, minced (2 Tbsp)
½ inch knob of fresh ginger, minced (2 Tbsp)
1 tsp salt
3 Tbsp olive oil (enough to coat all the pieces)
Instructions
- Preheat oven to 375°, spray coolie sheet with cooking spray.
- Peel and slice the carrots into ½ inch rounds.
- Add the garlic and ginger.
- Add the salt.
- Drizzle with olive oil and stir until thoroughly mixed.
- Spread the carrots in single layer on a prepared cookie sheet. Bake 25 minutes, or until slightly browned.
