Ingredients

2 lb carrots, sliced or baby carrots
3 cloves garlic, minced (2 Tbsp)
½ inch knob of fresh ginger, minced (2 Tbsp)
1 tsp salt
3 Tbsp olive oil (enough to coat all the pieces)

Instructions
  1. Preheat oven to 375°, spray coolie sheet with cooking spray.
  2. Peel and slice the carrots into ½ inch rounds.
  3. Add the garlic and ginger.
  4. Add the salt.
  5. Drizzle with olive oil and stir until thoroughly mixed.
  6. Spread the carrots in single layer on a prepared cookie sheet. Bake 25 minutes, or until slightly browned.
