Orange/Ginger Glazed Carrots

Ingredients
1 (1-lb) pkg baby carrots, washed
1 tsp orange zest
¼ C orange juice
2 tsp unsalted butter
2 tsp honey or agave nectar
1 Tbsp grated ginger
¼ tsp salt
⅛ tsp pepper
1 C water
Instructions
- Stir together all ingredients in medium sauce pan over medium heat. Bring to a boil.
- Reduce heat, and simmer, stirring occasionally, 30-35 min, or until liquid evaporates and carrots are glazed.
