Chocolate Marshmallow Cookie

Ingredients
Cookie:
1 tsp vanilla extract
1 C sugar
2 eggs
½ C vegetable shortening
1¾ C flour
½ C unsweetened cocoa
1 tsp baking soda
½ tsp salt
1 pkg large marshmallows - slice in half
1 C powdered sugar
1/3 C half and half
¾ C butter
1 sq semi-sweet baking chocolate
1 tsp vanilla extract
Instructions
- Cream: vanilla, sugar, eggs, and shortening.
- Add and beat by hand: flour, cocoa, baking soda, and salt.
- Cover and chill. (can leave overnight).
- Using 1 tablespoon of mixture, roll into ball.
- Bake at 350° for 6-8 minutes. DO NOT OVER BAKE. Remove from oven.
- Press 1/2 of large marshmallow (cut side down) on each cookie.
- (OK if cookie cracks) Return to oven for about 2 minutes.
- Take out of oven. Using fingers, flatten/push down marshmallow (so it is not bulging).
- Drizzle with frosting.
- Mix: powdered sugar, half & half, butter, and chocolate square.
- In a pan over medium heat, melt this mixture together. Bring to a boil for 1 minute, without stirring.
- Remove from heat and add: vanilla and enough powdered sugar so that glaze will run, but will not be stiff.
- FREEZES WELL.
