Yield: 30 servings

Ingredients

Cookie:
1 tsp vanilla extract
1 C sugar
2 eggs
½ C vegetable shortening
1¾ C flour
½ C unsweetened cocoa
1 tsp baking soda
½ tsp salt
1 pkg large marshmallows - slice in half
1 C powdered sugar
1/3 C half and half
¾ C butter
1 sq semi-sweet baking chocolate
1 tsp vanilla extract

Instructions

  1. Cream: vanilla, sugar, eggs, and shortening.
  2. Add and beat by hand: flour, cocoa, baking soda, and salt.
  3. Cover and chill. (can leave overnight).
  4. Using 1 tablespoon of mixture, roll into ball.
  5. Bake at 350° for 6-8 minutes. DO NOT OVER BAKE. Remove from oven.
  6. Press 1/2 of large marshmallow (cut side down) on each cookie.
  7. (OK if cookie cracks) Return to oven for about 2 minutes.
  8. Take out of oven. Using fingers, flatten/push down marshmallow (so it is not bulging).
  9. Drizzle with frosting.
FROSTING:
  1. Mix: powdered sugar, half & half, butter, and chocolate square.
  2. In a pan over medium heat, melt this mixture together. Bring to a boil for 1 minute, without stirring.
  3. Remove from heat and add: vanilla and enough powdered sugar so that glaze will run, but will not be stiff.
  4. FREEZES WELL.
(Double cookie recipe, but not frosting.)
