Mushroom Sauce

This is an excellent sauce for pork loin or poultry dishes.Yield: 4 servings

Ingredients
1 8-oz pkg mushrooms or several portobello mushrooms, thinly sliced
3 Tbsp onion, diced
2 Tbsp unsalted butter
3 garlic cloves, minced
2 Tbsp white wine
splash of rice vinegar
1 C chicken broth
¼ C creme fraiche or sour cream
2 Tbsp cream cheese
2 Tbsp Dijon mustard
2 Tbsp heavy cream if needed for moisture
3 Tbspflat-leaf parsley or cilantro, chopped
olive oil as needed
Instructions
- Melt butter in fry pan. Sauté onions until translucent. Add mushrooms and sauté. Add olive oil if needed.
- Add garlic, wine and vinegar and continue cooking. Mix thoroughly and let liquids partially evaporate.
- Add chicken broth and continue cooking. Reduce the chicken broth by about 2 thirds.
- Add creme fraiche, cream cheese, and mustard. Stir until cheeses have melted and combined into the sauce.
- Add the parsley and serve.
- Note: This may be prepared in advance and reheated at serving time. Add the cream if needed for additional moisture.
