Balsamic Glaze
Balsamic Glaze

Good drizzled over roasted root vegetables, or egg plant, or just about anything including fruit or ice cream.

Yield: about ½ cup

Ingredients

⅓ C vegetable broth
¼ C EVOO
¼ C balsamic vinegar
2 Tbsp honey
2 tsp country* Dijon mustard
1 tsp lemon juice
Kosher salt & freshly ground balck pepper


* Country dijon is a milder, creamier version of Dijon mustard. If not available, mix 1 teaspoon regular Dijon with 1 teaspoon mayonaise. Dijonaise (½ C high-quality mayonnaise to 1 tablespoon Dijon mustard) would be like this.

Instructions
  1. In a small saucepan, combine the vegetable broth, oil, vinegar, honey, mustard, lemon juice and some salt and pepper. Cook over low heat until the glaze is reduced by half, about 10 minutes.
  2. Serve over the vegetables or as a dipping sauce.
