Chimichurri Sauce

This Argentineian condiment is used as an addition to nearly anything. It's a steak sauce, salad dressing (with the addition of a bit of extra vinegar), and is an excellent addition as a sauce for pasta.

Ingredients

(Use fresh herbs only) 1 C Parsley, chopped
1 C Cilantro, chopped
½ C Mint, chopped
0.2 oz Oregano, leaves only
1 Medium serrano pepper, stem removed, or any pepper source
5 Garlic cloves, smashed
½ C Shallots, minced
¼ C Red wine vinegar
¼ C Lemon juice
1 C EVOO


Instructions
  1. In a food processor, add parsley, cilantro, mint, oregano, serrano, garlic, shallots, vinegar, and lemon juice.
  2. Pulse mixture until smooth, add olive oil and pulse to just combine. Season to taste as needed. Set aside.
  3. Refrigerate for up to 30 minutes or longer to allow flavors to meld. Serve over vegetables, grilled meats or use as a marinade.
