Chimichurri Sauce

This Argentineian condiment is used as an addition to nearly anything. It's a steak sauce, salad dressing (with the addition of a bit of extra vinegar), and is an excellent addition as a sauce for pasta.Yield: 8 servings

Ingredients
(Use fresh herbs only) 1 C Parsley, chopped
1 C Cilantro, chopped
½ C Mint, chopped
0.2 oz Oregano, leaves only
1 Medium serrano pepper, stem removed, or any pepper source
5 Garlic cloves, smashed
½ C Shallots, minced
¼ C Red wine vinegar
¼ C Lemon juice
1 C EVOO
Instructions
- In a food processor, add parsley, cilantro, mint, oregano, serrano, garlic, shallots, vinegar, and lemon juice.
- Pulse mixture until smooth, add olive oil and pulse to just combine. Season to taste as needed. Set aside.
- Refrigerate for up to 30 minutes or longer to allow flavors to meld. Serve over vegetables, grilled meats or use as a marinade.
