Ingredients

1 Tbsp butter
1 (6-oz) boneless pork loin chop, cut into small pieces
¼ C chopped carrot
¼ C chopped broccoli
1 green onion, chopped
1 egg, beaten
1 C cold cooked rice
¼ C frozen peas
1½ Tbsp soy sauce
⅛ tsp garlic powder
⅛ tsp ground ginger
Options: chicken instead of pork;
additions chopped celery, mushrooms, sweet potatos, bell pepper.

Instructions
  1. Melt butter in large non-stick skillet over medium heat. Cook and stir pork, carrot, broccoli, and green onion in melted butter until pork is cooked through, 7-10 minutes. Remove pork mix to a bowl and return skillet to heat.
  2. Scramble egg in the skillet until completely set. Return port mixture to skillet.
  3. Stir in rice, peas, soy sauce, garlic powder, and ginger into pork mixture. Cook and stir until heated through. 7 - 10 minutes.
