Ingredients
1 Tbsp butter
1 (6-oz) boneless pork loin chop, cut into small pieces
¼ C chopped carrot
¼ C chopped broccoli
1 green onion, chopped
1 egg, beaten
1 C cold cooked rice
¼ C frozen peas
1½ Tbsp soy sauce
⅛ tsp garlic powder
⅛ tsp ground ginger
Options: chicken instead of pork;
additions chopped celery, mushrooms, sweet potatos, bell pepper.
Instructions
- Melt butter in large non-stick skillet over medium heat. Cook and stir pork, carrot, broccoli, and green onion in melted butter until pork is cooked through, 7-10 minutes. Remove pork mix to a bowl and return skillet to heat.
- Scramble egg in the skillet until completely set. Return port mixture to skillet.
- Stir in rice, peas, soy sauce, garlic powder, and ginger into pork mixture. Cook and stir until heated through. 7 - 10 minutes.
