Chicken-Cabbage Soup with Tomatoes

Save dish washing. Do this in an Instant Pot. Instructions included.
Note: If boiled cabbage is not on your "goto" list of comfort foods, try recipe.
Yield: about 15 Cups
Ingredients
1 large onion, chopped
1 celery ribs, chopped
1 ½ Tbsp vegetable oil or more as needed for sauté
1 head cabbage, shredded
¼ C juice from the dill pickle jar (or ½ tsp dried dill weed) ½ C white wine
1 quart (4 C) tomato juice
1 16-oz can diced tomatoes
4 C chicken broth (or substitute water) 1 Tbsp chicken base if using water
½ tsp garlic powder (or to taste)
2 C cooked chicken, chopped
½ tsp salt
½ tsp pepper
Instructions (Instant Pot)
- Set the Instant Pot to Sauté, and add the oil. Sauté onion and celery about 5 minutes. Add the shredded cabbage and dill seasoning. Sauté until cabbage is translucent and beginning to brown. (Add oil as needed.)
- Stir in wine, diced tomatoes and tomato juice, chicken broth (or water and chicken base), and garlic powder plus any other seasonings you prefer. Bring to boil.
- Reset Instant Pot to Slow Cook mode. Cover, and simmer 45 min. If you don't have a regular lid that fits, be sure to leave the steam vent open on the pressure lid. (Instant Pot glass lids are available for slow cookery and other non-pressure functions.)
- Add chicken, salt and pepper. Simmer covered 15 minutes.
