Leftover Steak Fried Rice

Ingredients
1 med. zucchini
4 oz mushrooms
2 eggs, slightly beaten
3 C cold, cooked rice
½ lb leftover steak
1 C frozen peas
2 Tbsp. soy sauce
1 Tbsp grapeseed oil
2 garlic cloves, pressed
2-3 Tbsp sesame oil
Instructions
- Cut mushrooms and zucchini into uniform pieces.
- Heat large skillet over midium high heat. Add oil.
- Once oil is shimmering, add garlic and cook until nice and fragrant, about a minute.
- Add mushrooms and zucchini, cook for 3-5 min, or until nicely browned and softened, stirring frequently.
- Push vegetables to the side, and add beaten eggs. Scramble the egg until just set and mix with the vegetables.
- Stir in rice and cook 2-3 min, stirring frequently
- Add sliced steak and peas. Stir in the soy sauce and sesame oil. Mix and cook until everything is heated through. Serve immediately.
