Best Fluffy Pancakes
Including instructions for Cuisinart Griddler.(These are from scratch!)

Ingredients
2 C all purpose flour (10 oz)
¼ C granulated sugar or sweetner (2 oz)
4 tsp baking powder
¼ tsp baking soda
½ tsp salt
1¾ C milk
¼ C butter (2 oz)
2 tsp pure vanilla extract
1 large egg
Instructions
- Combine together the flour, sugar (or sweetener), baking powder, baking soda and salt in a large-sized bowl. Make a well in the centre and add the milk, slightly cooled melted butter, vanilla and egg.
- Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there may be a couple of lumps but that's okay).
(The batter will be thick and creamy in consistency. If you find the batter too thick -- doesn't pour off the ladle or out of the measuring cup smoothly -- fold a couple tablespoons of extra milk into the batter at a time until reaching desired consistency). - Set the batter aside and allow to rest while heating up your pan or griddle.
- Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.
- When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
- Serve with honey, maple syrup, fruit, ice cream or frozen yoghurt, breakfast meats (bacon, ham or sausage), or enjoy plain!>
- Mix pancake ingredients together as described above.
- Turn on the Cuisinart Griddler. Select Grill/Griddle and set temperature to 350°
- When preheated, use ¼ cup measure and drop batter onto preheated griddle. (If you like extra buttery pancakes, put 1 teaspoon of butter on each plate and melt before dropping batter.) Set the count up timer. Cook pancakes until bubbles form, about 4-5 minutes; flip and cook until done, about 3 minutes longer.
- Preheat good quality, nonstick pan or griddle on medium heat first. When it's hot, lower the heat to low-medium heat. Important: Wait two minutes. Lightly grease the pan with a small amount of butter, and wipe away any excess butter with a paper towel.
- Use a ¼ C meausring cup to pour batter for best-size pancakes. Start pouring from the middle, then countunue pouring slowly in circular motion so that batter spreads into perfect round shapes.
- Allow the pancakes to cook properly! Don’t rush them on high heat, or flip them too early. Let that under-side cook to a beautiful golden brown colour, and when bubbles start forming on top and around the surface (batter side), they are ready to flip.
- How to get that flip perfected without creating lopsided pancakes? Grab a good, plastic spatula and slide it underneath the pancake. Use your WRIST to gently flip them instead of using your whole arm. You’ll know what I mean when you’re in front of your pan ready to flip. THIS makes a HUGE difference.
- You can keep pancakes warm ona wire rack placed on a baking sheet in a 200° oven until all the batter is used.
