Instant Pot Polenta

Ingredients
Method 1: Single Pot Direct 1 tsp fine grained salt
4 to 4 ½ C water (or unsalted chicken stock)
1 C coarsly ground polenta
Method 2: Pot-in-Pot using 3-quart Inner Pot
1 tsp fine grained salt
4 to 4 ½ C water (or unsalted chicken stock)
1 C coarsly ground polenta
2 C water for outer pot
Both Methods:
2.5 Tbsp unsalted butter
Optional: ½ to 1 C freshly grated Parmesan cheese
Instructions
- Method 1: Single Pot Direct
- Place salt, liquid, then cornmeal into pot liner. Do not mix!
- Pressure cook at High Pressure 10 min., Natural Release for 15 min. After 15 min, release remaining pressure and remove lid.

Method 2: Pot-in-Pot using 3-quart Inner Pot
- Place salt, cornmeal, then liquid to 3-quart pot liner.
- Add 2 C water and low-profile trivet to larger pot. Then place smaller 3-qt inner pot on the trivet. Close lid of larger pot and seal.
- Pressure cook on High Pressure for 15 minutes. Release pressure after 15 min, and remove lid.
- Add butter then mix polenta with whisk until it is your desired consistency.
- Option: Mix in Parmesan cheese
- Check seasoning and salt and pepper to taste, then serve.
