Baked Apples with Cranberry Stuffing

Ingredients
3 Large Gala apples
2 Tbsp lemon juice
¼ C (½ Stick) unsalted butter room temperature
½ C crumbled corn muffins ( or cornbread stuffing mix)
½ C Craisins
2 tsp minced ginger
2 garlic cloves, minced
¼ C brown sugar
1 Tbsp lemon juice
Salt and pepper
1 C hard cider

1 C hard cider
Instructions
- Preheat oven to 375°. Prepare a 1½ qt. baking dish with non-stick cooking spray.
- Prepare a bowl of water with a small amount of lemon juice to prevent apples from turning brown while preparing them for the oven.
- In a small mixing bowl, combine butter and the next seven ingredients. Moisten the mixture with a small amount of the cider.
- Prepare apples: Quarter and peel the apples and discard the central seed core. Store in the lemon water.
- Cut each apple quarter into about 3 slices. Spread a layer of apple slices then cover with cranberry mixture. Then add another layer of apple slices.
- Bake covered for 20 minutes, then remove the cover to finish baking about 10 to 15 minutes.
- Serve warm or hot.
