For Thickening: Use Arrowroot for Cornstarch or Wheat flour
- Arrowroot is a great thickener for sauces and gravys. Do use it within a couple of months of purchase, as it does lose thickening properties over time.
Cornstarch: Substitute arrowroot for cornstarch. It's more healthful and less is used. The ratio is 1 teaspoon of cornstarch = 1¾ teaspoon of arrowroot. Multiply your recipe amount of cornstarch in teaspoons by 0.57. (1 tablespoon = 3 teaspoons.).
Wheat flour: To substitute arrowroot for wheat flour, 2 tablespoons (6 teaspoons) of flour = 2½teaspoons of arrowroot. The factor for multiplying the recipe amount of flour in teaspoons is 0.42. (1 tablespoon = 3 teaspoons.)
