Peppered Lemon Chicken Pasta
Peppered Lemon Chicken Pasta

Yield: 4 1½-cup servings

Preparation time: 15 minutes — Cooking time: 16 minutes

Ingredients

8 oz uncooked spaghetti or linguine, broken in half
¼ cup unsalted butter
1 lb cooked chicken bits
3 tbsp fresh lemon juice
½ tsp salt
¼ tsp ground red pepper
¾ C sliced green onions

Instructions

  1. Cook pasta according to package directions in 4-quart saucepan. Drain. Remove pasta from pan; keep warm.
  2. Melt butter in same pan until sizzling; add chicken. Cook over medium-high heat, stirring often, until chicken is golden brown (6-8 minutes). Stir in lemon juice, salt, and ground red pepper. Return cooked pasta to pan; toss to coat. Remove from heat. Stir in green onions.
