Simple Sesame Noodles
Simple Sesame Noodles

Yield: 8 servings

Ingredients

12 oz thin noodles (spaghetti)
¼ C soy sauce**
¼ C olive or grape seed oil
3 Tbsp pure sesame oil
2 Tbsp sugar (optional)
2 Tbsp rice vinegar
½ tsp hot chili oil
4 cloves garlic, minced
4 green onions, thinly sliced
3 Tbsp sesame seeds

** Note: Suggest adding soy sauce in small increments. It can quickly overpower the other ingredients. Unless you are a fan of soy sauce, you probably won't want the full amount. Instructions

  1. Bring a large pot of water to a boil. Cook noodles according to the package instructions.
  2. Meanwhile, whish together the soy sauce, olive oil, sesame oil, vinegar, sugar (if using), vinegar, chili oil and garlic in a bowl. Taste and adjust ingredients if needed.
  3. Drain the noodles. Pour the sauce over the warm noodles and toss to coat.
  4. Sprinkle with the green onions and sesame seeds and toss.
  5. Serve in a bowl with chopsticks.
Notes

Reviewers of this recipe gave suggestions for additions and caution NOT to skip the chili oil. Some suggested additions: julienned vegetables (carrots and red peppers). Some recipes add a bit of peanut butter to the sauce. If you like the sweet version of the sauce you may like to use brown sugar for additional flavor. Some like to add shrimp to the mixture.
